The Met Ball is coming!! What’s a girl To bake when she’s craving NYC flavors? As we count down the hours to the Met Ball here is one of my favorite recipes inspired by one of my favorite NY delicacies because the always glorious Met Ball screams NY just like these do!
Italian Rainbow Cake (aka Tri Color Cookies)!
1/2 cup of sugar
1 cup of flour
1 tsp of almond extract
Food coloring as you wish (each cake is different- red, yellow and green..)
A little less than 1/2 cup of oil
Combine eggs and sugar and beat well, add flour, almond extract and food color and continue to beat for about 2 minutes, fold in oil. Pour into prepared jelly roll pan/ cookie sheet and spread batter to all corners, bake for 12 minutes and cool.
Repeat this for each color and then assemble:spread jelly- I use strawberry- spread on cake and layer green on the bottom then yellow and then red. The you make the chocolate glaze.
In a saucepan melt 1/3 cup of margarine and stir in 1/2 cup of cocoa, cook for 1 minute and take it off the stove and add 1/3 cup of non dairy creamer
1 tsp of vanilla
2 1/2 cups of confectioners sugar
Mix well until smooth and pour on cake fast before it hardens. Once it’s cool cut and voila you have the perfect rainbow cookies! And they’re dairyfree!
